The first real look at what humans will eat in Monstropolis is here, and it comes with eyeballs. Disney has previewed the menus in development for Harryhausen’s and the all-new Archie’s Scare Pig Pizza, the two restaurants headed for the Monsters, Inc. land at Disney’s Hollywood Studios, and the headliners are a ramen bowl garnished with fishcake sliced to look like eyeballs and the first real-world version of Blort, the soda from Monsters University.
The details came in an Oct. 6 Disney Parks Blog interview with Chef Brian Piasecki, Disney’s Director of Culinary and Concept Development, and Beverage Director Evan Rosenthal. Disney framed the dishes as items “being explored,” so treat what follows as a strong preview rather than a locked menu with prices.
The team’s working philosophy is what it calls “grossly fun” food: familiar flavors with a monster twist. “Monstropolis is full of fun, adventure, zaniness, and craziness,” Piasecki said. “We’re taking familiar dishes and adding unexpected twists that feel authentic to this world.” Rosenthal said the process kept raising the same question in the kitchen, whether a dish had gone too far, and that the answer was sometimes to push it further.
Harryhausen’s Goes Beyond Sushi
Harryhausen’s is the upscale restaurant where Mike took Celia on their memorable date in Monsters, Inc., and Walt Disney Imagineering is building it as a table-service restaurant. Its centerpiece is the head sushi chef from the film, recreated as a new Audio-Animatronics figure that uses eight tentacles to prep food in the middle of the dining space. Disney says there will be more than sushi on the menu, and at D23 in August, Imagineering’s Michael Hundgen called it “a menu unlike anything else we offer at Walt Disney World.”
The dish getting the most attention is ramen. According to Disney, the bowls being developed draw on traditional Japanese flavors, with rich tonkotsu broth and alkaline ramen noodles as the base. The monster touches are on top: fishcake cut to look like eyeballs and green eggs. A photo from Disney’s culinary lab also shows mushrooms, spinach, nori, a breaded cutlet, and a carafe of broth among the test ingredients, though Disney has not published a full ingredient list for any one bowl.

Rosenthal said the goal was a restaurant that feels like a swanky night out while still working for every age. “Making sure that the menu appeals to younger guests, to older guests, and then challenging ourselves,” he said, is how the team approached it, looking for something “that gets people talking about it and gets them to come back because it’s delicious and entertaining.”
Archie’s Scare Pig Pizza Brings Blort to Life
Archie’s Scare Pig Pizza is the quick-service half of the pair. It is inspired by Monsters University and is pitched as the pizza place where generations of monster college students hung out after class. Archie, for the uninitiated, is the six-legged Fear Tech mascot that Monsters University students kept “borrowing.” Next door, the Monsters University Alumni Club will be open to guests eating at Archie’s, according to the D23 announcement.
Rosenthal said the menu was built around nostalgia for neighborhood pizza shops, with “elements of fun unexpectedness” layered on. The bigger news is in the cup. Blort, one of the most popular soft drinks in Monstropolis, will make its real-world debut at Archie’s. Disney’s description is still a tease: “maybe” a purple frozen spin on the soda, topped with a Scream Apple Foam. No price or size has been announced.
That cautious wording matters. Disney uses words like “maybe” and “being explored” throughout the preview, and park menus routinely change between concept and opening day. The ramen and Blort are the clearest signals of direction, not a guarantee of exactly what will be on the menu board.
When Monstropolis Opens to Humans
Disney has said parts of Monstropolis will open in 2027, while work continues on the land’s headliner, a suspended door coaster that will take riders into the Monsters, Inc. factory. No opening date has been announced for the land or for the coaster. In its dining preview, Disney said Harryhausen’s and Archie’s will be serving when Monstropolis welcomes humans for the first time in 2027.
The rest of the land announced so far includes the Glob Theater, which will host a show called “Welcome to Monstropolis” built around a new Randy Newman song of the same name, plus the Scareporium shop. The whole land is framed around H.U.M.A.N. Day, short for “Humans Understanding Monsters Are Nice,” the in-story occasion for monsters to finally invite people in.

For anyone planning a 2027 trip, the takeaway is simple. Harryhausen’s is shaping up as one of the more ambitious table-service additions at the park, and Archie’s gives the land a quick-service option with a signature drink fans of the films will want to try at least once. Expect reservations, prices, and final menus closer to opening.
